This Navratri dig into some delicacies made out of Varai

Our reader Sindhu Bhadange shares three healthy and enjoyable recipes prepared from the very popular Maharashtrian speciality Varai.
Varai thalipeeth
Ingredients
- 2 bowls Varai
- ½ bowl Sabudana
- ½ bowl grinded groundnut
- 4 green chillies
- 1 boiled potato
- Sugar and salt as per taste
Method
- Soak varai and sabudana at night.
- Mix varai, sabudana, smashed potato, grinded groundnut, sugar and salt and grind it in a mixer.
- Add chilli paste to the mixture.
- Knead it into nice dough.
- Add little water if you find the mixture is too thick.
- Now remove small balls of the dough and roll it into a round thalipeeth.
- Serve hot.
Varai Dosa
Ingredients
- 2 bowls Varai dough
- 2 bowls Sabudana dough
- 2 boiled potato
- 4 green chillies paste
- Grinded groundnut as per taste
- Salt and sugar as per taste
Method
For Dosa
Mix Varai and Sabudana and prepare it into neat thin dough. Heat a pan and start removing crispy dosa of the same.
For chutney
- Add chillies paste to grinded groundnut, smashed potato, salt and sugar.
- Mix it well and bring to boil.
- Serve with hot Varai Dosa.
Varai Idli
Ingredients
- 2 bowls Varai
- 1/2 bowl Sabudana
- Grinded groundnut
- Green chilli paste
- Lemon
- Sugar and salt as per taste
Method
- Soak sabudana at night.
- Next day grind sabudana and varai in a mixer.
- Now add sugar and salt as per taste.
- Add this mixture in the Idli maker.
- Once the idli is ready remove it and cut in four slices.
- Heat oil in kadai and add chilli paste, groundnut, lemon juice and slices of idli.
- Fry till golden brown.
- Serve hot.
